Healthy Enchiladas

I don't know about you but I LOVE Mexican food. 
However with all the cheese, meat, and carbs, Mexican food is rarely a healthy option. 
So one day in a desperation for some good healthy Mexican food, I scoured the wonderful world of Pinterest, but even then I couldn't really find a healthy option that didn't require 10,000 ingredients and a Mexican Mama to cook it for you so I decided to make my own and dear friends let me tell you, this is my new FAVORITE meal!!
It's healthy, simple, meat free and best of all Delicious!


To start you'll need:
One Avocado 



One Bunch of Cilantro 

Two vine ripened tomatoes

One package of cream cheese

One can of mild green chile enchilada sauce

One can of whole kernel corn

One can of Black Beans

One package of Medium Tortillas, 10 count (you can use the tortillas of your choice and substitute for gluten free or low carb to fit your diet)


Start by dicing the tomatoes and cilantro, combine them in one bowl then take about one forth of the mixture and set aside in a separate bowl for later.


Then in a large mixing bowl add the cream cheese, avocado, drained and rinsed black beans and corn and the large bowl of tomatoes and cilantro. 
The easiest way to mix it all is with your hands, I usually use cooking gloves and mush everything together until the cream cheese and avocado are completely mixed with the other ingredients. 



Once all of your ingredients are fully mixed pre heat your oven to 350 degrees 

Get a large baking dish and spray your oil of choice so that your enchiladas don't stick to the sides (I use coconut or olive oil)

With a large spoon evenly distribute
The filling into the tortillas and roll them, then line them up in your baking dish.

Once all your enchiladas are in the dish cover them evenly in the enchilada sauce and then sprinkle the remaining tomatoes and cilantro on top. 

Cover then bake for 30 minutes at 350 degrees!

And Voilà absolutely delicious, healthy enchiladas the whole family will love. These can be served with rice, a vegetable of your choice or even on their own!
